We popped in to visit the team earlier in the spring to catch up with the Laing family, the masterminds behind their truly handmade shortbread. Seeing their process firsthand is a brilliant reminder of what authentic Scottish baking actually looks like. There are no huge industrial vats or automated conveyor belts here. Instead, you find skilled bakers rolling out the dough by hand, cutting each piece with care, and ensuring every tray meets their exacting family standards.
Our relationship with Rupert and the team goes back a long way. We share a passion for doing things properly, sourcing carefully, and celebrating the rich heritage of our home city. This is shortbread made without compromise. The texture is light, crisp, and buttery beyond belief.
